Quick Hot Cocoa

Don't buy those cocoa mixes. This is just as easy, doesn't have hydrogenated oils or emulsifiers added, and you can adjust the sugar to taste. European style hot cocoa uses less sugar, and brings out the flavor of the chocolate.
1 Tbsp cocoa
1 heaping Tbsp brown sugar
1/3 cup nonfat dry milk
1 cup boiling water
dash vanilla extract

Mix cocoa and sugar in a 12 oz mug. Add 1/3 of the boiling water. Mix thoroughly to remove lumps. Add remaining boiling water and add dry milk while stirring. Add a dash of vanilla and/or cinnamon if desired.
