Johnny Cakes

Measure and keep ready
1 cup frozen, fresh, or canned (drained) corn
Whisk together in medium bowl:
1 cup whole wheat flour
1 cup corn meal
2 tsp baking powder
2 heaping tsp brewers yeast
1 scant tsp salt
Whisk together in small bowl or 2 cup measure:
1 1/2 cup skim milk
1 egg
1/4 cup oil
1/4 cup corn syrup

Heat skillet to 350. Whisk corn with dry ingredients. Add liquid and mix quickly. Do not overmix. Drop by 1/4 cup into skillet. Cook until bubbles appear on top. Turn over and cook on other side until brown and done in the middle.

Blueberry Pancakes

Substitute 1 cup blueberries for corn.

Apple Cinnamon Pancakes

Substitute 1 cup chopped apple for corn. Add 1/2 teaspoon cinnamon to dry ingredients.
